Yoghurt from Chickpeas?
I would like to explain how to make culture from chickpea for natural yoghurt. If you like to make yoghurt and also looking forward to finding how to get your natural culture for the yoghurt, I explain here, how you would produce a yoghurt culture at home.
Ingredients
20 chickpeas.
1 glass of Organic Milk
1st day
Leave the 20 chickpeas in a glass, then measure the glass of milk, boil it till the temperature gets to 65°C wait cooling down till 38°C, pour this milk into the glass with chickpeas. (reminder never use milk in carton )
Cover the glass with a cloth then keep it for 1 day, even you can leave it in an oven which is heated 2 or 3 min in 100 °C for 1 day.
2nd day
After 24 hrs open the cover or take it from the oven and take the chickpeas out of the glass, now close the lid.keep in the fridge 24 hrs.
3rd day
Again after 24 hrs keep that milk in the glass, which is covered with a lid within the fridge open poured in a strainer. That leftover on top of a strainer, which will be your first yoghurt culture.
This time, boil 2 glasses of milk till the temperature gets to 65° C. Wait cooling down till 38°C, pour this milk as slowly stirring into the culture and make sure to mix properly. Suggested pouring in an earthen pot, cover with a cloth or keep it again in the oven which is heated 2 or 3 min in 100 °C for 12 hrs.
After waiting for 12 hrs, this became yoghurt from chickpeas culture. I assume it will be a bit liquid this time but after making yoghurt from this culture 2 or 4 times, which you will get a very good yoghurt structure.
4th day
Our produce of yoghurt from chickpea culture now may be a bit liquid but repeat again, for 2 glasses of boiled until 65° C. Wait cooling down till 38°C, again then this time will be much nicer.
You can do this process by repeating the 5th day taking 2 spoons from yoghurt and 6th day increasing the milk half-litre using the 5th-day yoghurt to make it which will be good organic yoghurt.
